records consist of systematic coverage of press relating to Willan's professional activities for the years 1965-1998. Included
are newspaper articles written by Willan, clippings relating to the École La Varenne, and clippings that appear to have been
sent to Willan by publishing houses and that provide extensive press coverage on Willan's publications. For press clippings

The École de cuisine La Varenne was founded in Paris in 1975 and was named after François-Pierre de la Varenne (1618-1678),
the author of
Le cuisinier françois, one of the founding texts of modern French cuisine. The school's records consist of administrative files, promotional materials,
photographs, newsletters and other publications produced by the school, electronic records, as well as files of recipes and
menus. The records document the school's programs at its different locations most notably in France and the United States.

La Varenne was first located in Paris in the rue Saint-Dominique in the 7th arrondissement near the Hôtel des Invalides beginning
in 1975 and until 1990, a period during which it was accredited to deliver professional culinary degrees. After 1990 when
the Paris location closed, the school's programs primarily continued in Burgundy and in the United States. The records of
La Varenne in Paris consist of accounting and administrative files relating to the school's foundation, films and photographs

In 1982, Anne Willan and Mark Cherniavsky purchased the Château du Feÿ near Villecien in Burgundy as a family retreat. A large
château dating primarily from the 17th century, it became the site of La Varenne's educational programs beginning in 1988.
The school expanded its programs there furthermore after it closed its Paris location in 1990. The school's records at Le
Feÿ consist of administrative files, a guestbook, promotional materials, bulletins, photographs documenting the school's premises
and its staff, and electronic records. The series comprises CDs and DVDs containing image files. Software formats were identified

Anne Willan and Mark Cherniavsky moved to Santa Monica in 2007, the year they put up for sale the Château du Feÿ in Burgundy.
Willan organized gastronomic classes there in addition to participating in conferences and lectures throughout the United
States, and actively pursuing writing. The records consist of administrative files, files relating to conferences and courses,

The Anne Willan and Mark Cherniavsky gastronomy collection includes ephemera such as menus, advertising cards, broadsides,
cuttings from scientific publications and newspaper advertisements and tearsheets. There are cards advertising products of
the Liebig Company and lithographs by Paul Iribe that promote the wine distributed by the Établissements Nicolas. Included
are menus and recipes designed by the artists Alphonse Mucha (1860-1939), Léon Lebègue (1863-1944), and David L. Goines (born
1945).

Belgium: Liebig Company
Scope and Contents
The Liebig Company, which was named after the German chemist Baron Justus von Liebig and created by a German engineer George
Christian Giebert, was established in London and had factories in Latin America and Africa. The place of publication that
appears on the advertising cards in the collection is listed as Antwerp in Belgium.
The four suites of six cards each advertise the products of the Liebig Company, including the "Véritable extrait de viande
Liebig," a beef extract that is presented in one suite as the source of the success for a restaurant. Three suites describe
products that have benefited from the beef extract, including salt ("Das Saltz"), chocolate ("Le chocolat"), and more generally
dishes ("Mets") such as "Mets-Gibier." The company's factories in Latin America (Argentina, Uruguay, Paraguay), in particular
that of Fray-Bentos, and in South West Africa, are also advertised. Each card has the name of Baron Justus von Liebig in blue
on the verso: "J. Liebig." Two suites were published in Antwerp. The place of publication is not indicated in the other two
suites.

Encyclopédie for the entries "Patissier" and "Confiseur." The
Encyclopédie, ou Dictionnaire raisonné des sciences, des arts et des métiers (1751-1772) initiated by Diderot and d'Alembert documented trades and mechanical arts, including the tools and processes
used by pastry chefs and confectioners.

Le monde illustré related to food preparation in France. Wood engravings by Charles Barbant (1817-1887), Frédéric-Théodore Lix (1830-1897)
and Charles Maurand (1824-1904) from designs by M. Moullin and Jacques Desroches-Valnay illustrate the kitchens in the Tuileries,
the newly restored kitchens at the pavillon de Flore, preparation of the food such as ice cream at the Tuileries, and the

The Anne Willan and Mark Cherniavsky Gastronomy Collection features historic menus dating from the late 18th century until
the early 20th century. Two menus on fabric were commissioned for banquets held in Saint-Étienne, France in the early 20th
century. One dated from 1905 was designed by Alphonse Mucha (1860-1939). There are also menus that were designed by Léon Lébègue
for dinners held by the society of authors named Le moulin à sel, which took place in Paris. For a menu that was engraved
by Jean-Émile Laboureur and that is dated from 1936, see Series IV.D (Box 209*). For a menu dating from the reign of King
