The stems, discharged through the open end of the cylinder, go into by-products or are used for soil conditioner. Careful watch must be kept over this process to assure wines of highest quality. At this stage yeast converts the natural grape sugar of the juice into equal parts of wine alcohol and carbon dioxide, which escapes. It is the same process used in baking brerad and making vitamin drugs and cheese.

In this photograph a winery worker is shown mixing special lots of wine yeast with wine. This mixture will be added to the crushed grapes as a fermentation starter. In the fermentation process -- the same as that used in baking bread and making vitamin drugs and cheese -- the yeast enzymes convert the natural grape sugar of the crushed fruit into approximately equal parts of alcohol and carbon dixoide which escapes.
